Sausage and Hash Brown Frittata

This summer my mom passed away. My husband and I stayed in a beautiful bed and breakfast in Allegan, Michigan. One of the breakfasts we had was an awesome hash brown frittata. I decided to create one like it at home. My family loves frittata anyway. My son makes them often for breakfast and brunch. Here is the sausage and hash brown frittata recipe I created, try it out and let me know what you think!

Sausage and Hash Brown Frittata Recipe:

Ingredients:

3 raw potatoes shredded into cold water
2 tbsp fat( butter, oil, or bacon grease)
1/2 pound sausage
1 small onion
10 scrambled eggs
1/3 cup milk
2 cups shredded cheese (1/4 cup reserved)

  Directions:

Preheat oven to 400. Drain potatoes from the cold water and pat dry. Heat oil in an oven proof large skillet (mine is a cast iron). Fry the potatoes until they are golden and crisp. Remove from pan and set aside.
Add the sausage and onion to the skillet and brown. Once the onion is translucent and the sausage crumbles are browned remove and put with the potatoes. Leave the grease and drippings in the pan.
Beat together the eggs and milk. Add this to the hot skillet. Cook and lightly push around eggs until they are lightly set, (like chunky pudding).

Add 1 3/4 cups cheese, the sausage, potato and stir gently to combine.
Bake for about 15 minutes. Add remaining 1/4 cheese and bake 5 more minutes. Cool slightly before serving!
