Lemon Blueberry Shortbread Cookies
Shortbread cookies are one of my favorite. They are easy to make and don’t require a great deal of ingredients. I was feeling summery when I came up with this recipe and felt like lemon and blueberry sounded great together! So Lemon Blueberry Shortbread cookies were born! Perfect summer cookie!
Lemon Blueberry Shortbread Cookies
Ingredients:
1 cup butter
1 cup margarine
1 1/2 cup sugar
4-6 tablespoons lemon juice (I like strong lemon flavor and used 6)
1 lemon zested (about 2 tablespoons zest)
5 cups flour
3.5 ounces of dried blueberry’s
Directions:
Preheat oven to 375 degrees. With a mixer combine sugar, butter and margarine until light and fluffy. Add lemon juice and zest; mix until combined will.
Add blueberry’s and stir well. Slowly add the flour until its a nice stiff dough. You can make these as either a drop cookie or form 1 inch balls.
Place on a lightly greased baking sheet and bake for 12-15 minutes. Serve and Enjoy #homemadeYUMMY
