Instant Pot Chicken Tortilla Soup

Instant Pot Chicken Tortilla Soup is really a pressure cooked Chicken Tortilla soup recipe. You could even cook this in the crockpot or stove top. The recipe is very versatile. If you cook this in a crockpot set it on low and cook for about 3-4 hours. If you cook it on the stove: simmer it on low for at least an hour. The longer it cooks the more tender the chicken will be. Mine from the pressure cooker was perfect! It didn’t fall apart and disintegrate. I have the Faberware Pressure Cooker that I got on Amazon

 

Instant Pot Chicken Tortilla Soup is perfect for a cold night or even when your craving tacos in the summer. Its a pretty fast soup and is simple enough to make for even a weeknight dinner.

Instant Pot Chicken Tortilla Soup Recipe

Ingredients: 

2 Tablespoon Olive oil

1 large onion, diced

1 bell pepper, diced

4 cloves garlic, minced

3 Chicken breasts, diced into bite size pieces

1 tablespoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt

1 teaspoon pepper

1/8 cup chopped fresh cilantro

1 lime juiced

1 can corn, drained

1 can black bean, drained

1 can fire roasted tomatoes (NOT drained)

4 cups Chicken broth

4 large flour tortilla

cooking spray

Directions: 

If your instant pot has a brown feature use it to brown: the onion, pepper, garlic and chicken using the olive oil. Otherwise brown those ingredients on the stove.

Put the remaining ingredients (except the tortilla and cooking spray) into your pressure cooker, mine has a soup setting. I used that setting for 35 minutes.

While your soup is cooking heat your oven to 400. Cut the tortillas into strips. Place on a baking sheet sprayed with cooking spray. Bake for 10-12 minutes making sure to stir them every 4 minutes.

That is it! Serve hot with tortilla strips, avocado, cheese, sour cream, limes, fresh cilantro or whatever combination you choose, Enjoy!
