Individual Peach Pies

August 24th is National Peach Pie day. I say eat these peach pies any day you like, lol. I always have trouble slicing and serving pie, especially that first piece. I prefer to make individual pies. So here is my recipe. Use your favorite crust recipe. I will share mine another time.

Individual Peach Pies
Ingredients:
4-5 cups fresh peaches, peeled and sliced
¼ cup sugar
3 tablespoons flour
½ tsp cinnamon
½ tsp nutmeg
¼ tsp salt
2 tablespoons butter softened
4 pie crusts (I made 2 double crusts recipe)
1 egg white,
2 tsps water
Cinnamon sugar blend
Directions:
Mix together the sugar, flour, cinnamon, nutmeg, salt, and butter. Now mix this in with the peaches gently so you don’t break up the peaches too much.

Peach filing

Each crust should make 2 individual pies. Cut the crust in half, if your using pre-prepared crusts, otherwise just split the dough evenly and roll.

Place ½ cup of peaches in the center of each dough. Fold over and roll up the edge. Cut a slit in the top. I used our initials for each person.

Mix together the egg white and the water. Brush each pie and sprinkle with cinnamon and sugar blend. Bake in oven preheated to 375 for 15-20 minutes.
