Grilled Apple and Chicken Salad
Grilled apple and chicken salad is my families favorite lunch. I grill chicken often for dinner and always throw a few extra on the grill just to make this. The last bowl I made up for my husband to take to work he never got because the kids ate it all before he even got a sandwich!
So you think your one of those people that doesn’t like apples, cranberries, or other fruit in your chicken salad. I was too but with the apples being grilled in it changes it and they just add another flavor layer to the deliciousness. But if you must go ahead and leave them out. Just use the lower amount of mayonnaise in the recipe.
My Grilled Apple and Chicken Salad recipe goes perfect with a ice cold glass of tea on a hot summer day. Its also a great way to feel summery in the winter time. My family eats it year round.
Grilled Apple and Chicken Salad Recipe
Ingredients:
1 large apple cored and sliced, I use a honey crisp apple
2-3 chicken breast, grilled, cooled, and chopped (about 4 cups)
1 cup chopped celery
1 1/2 – 2 cups mayo (depends on how wet or dry you like it, you can always add more
but can’t take it away)
2 teaspoons celery seed
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Directions:
In a medium bowl mix together the mayo, celery see, garlic powder, salt, and pepper.
Grill the apples for 2-3 minutes on each side. Cool and chop.
Mix 1 cup chopped apples, the chicken, and celery into the mayo mixture. Chill for an hour or longer. Its best made the night before. Serve and Enjoy!
