One skillet breakfast (Extra Happy Breakfast is what we call it in my house) I originally posted this recipe to only my Facebook followers.  It was so well loved there that I decided I should probably share it with all my readers. Just so you know if you follow me on different social media’s you get different posts.

This simple Extra Happy Breakfast has everything you would want for breakfast. Crispy potatoes and bites of sausage are the star of this show with some eggs as support. Add in a slices of avocado, green onion, and some diced tomatoes and you have yourself a hit!

We served up Extra Happy Breakfast on Christmas morning. It was a nice filling meal that would hold us over for that big early dinner; yet be easy enough for me not to be slaving in the kitchen all day. This one skillet breakfast was perfect to accomplish all that. Since then I have made it numerous times and the kids keep asking for it still.

Extra Happy Breakfast Recipe

Ingredients:
20 ounce diced potatoes (I used Simply Potatoes)
1/2 pound ground breakfast sausage
5-6 eggs (I use Happy Egg Co, USA)
Optional toppings: green onion, tomato, avocado
Directions:
If you don’t have Gotham Steel Pans you may want to grease your pan with about 1-2 tablespoons of your choice of fat/oil. I didn’t use any because of these pans and looks at the golden color of my potatoes!

Cook your potatoes until the start to brown on medium high heat. Once they begin to brown add crumbles of the raw sausage to the top of the potatoes. Stir this in and cook until the sausage is done and the potatoes are golden.

 

Have your lid ready and give everything one last stir. Reduce heat to low. Now crack the eggs directly onto the potato sausage mixture.

Cover and let cook for 8-12 minutes depending on how cooked you want your eggs.

Top with tomato, green onion, avocado and enjoy!
