Eggplant Fries
Had a nice eggplant in the fridge that needed to be used and I didn’t feel like eggplant Parmesan. So I made these eggplant fries to go great with some BBQ chicken and corn on the cob. They would be good with some grated Parmesan mixed in with the bread crumbs too!
The Ingredients:
1 large eggplant
1 egg
2 tablespoons water
½ cup bread crumbs
¼ cup flour
½ tsp garlic powder
½ tsp onion powder
Salt and pepper as desired
The Directions:
Preheat oven to 425. Peel the eggplant. The cut into strips to resemble French fries, I cut mine into large ones you can cut them smaller.
Mix together the egg and water in one bowl. In another bowl mix together bread crumbs, flour, garlic and onion powder.Dip eggplant in the egg mixture. Slightly shake off excess liquid. Then roll it in the breadcrumb mixture. Place on a lightly oiled baking sheet.
Bake for about 30 minutes or until golden brown. I flipped mine once.
