EASY Southern Style Potato Salad
What would summer be without potato salad? How about a barbeque without potato salad? Summer would never be the same. I know we eat our share during the summer. This recipe is easy to make and last well covered in the refrigerator. It also makes A LOT. It’s perfect for all those summer parties and get together’s. Try making my easy southern potato salad today!
EASY Southern Style Potato Salad
Ingredients:
5 pounds Potatoes scrubbed
6 eggs (raw in shells)
1 large onion finely chopped
2 cups mayo
½ cup yellow mustard
¾ tsp celery seed
1 tsp salt
1 tsp pepper
Directions:
Place potatoes and eggs in a pot and fill with water. Heat on high until potatoes are tender when a fork is inserted. Drain and allow to cool while you do the next step.
In a large bowl combine the remainder ingredients. Peel and chop the eggs. Now chop the potatoes into bite size pieces. Stir the chopped potatoes and the eggs into the mayo mixture. Cover with plastic wrap and allow to cool completely in the fridge. I usually make mine the night before. I stir it occasionally while it’s chilling too.
