I am not a big fruit person. I prefer vegetable any day. With that being said, pumpkin is my favorite “fruit”. Pumpkin Dreams are my second favorite cookie. They have a great pumpkin flavor and are light and fluffy. There are vanilla chips (formally called white chocolate) that make these just dreamy! Whip up a batch of Pumpkin Dreams for this holiday season!

Pumpkin Dreams

Ingredients:

1 cup butter
¾ cup brown sugar
¾ cup sugar
2 eggs
¾ cup pumpkin (canned)
3 tsp pumpkin pie spice
½ tsp salt
1 tsp baking soda
2½ cup flour
½ package of vanilla baking chips (aka white chocolate chips)
Directions:
Preheat oven to 350. In a medium bowl, sift together the flour, pumpkin pie spice, salt, baking and soda. Set aside. With a mixer, beat together butter and both sugars until fluffy and light. Add the eggs one at a time; beat well in between each one. Next beat in the pumpkin. Add the flour mixture in small amounts until it’s all added. Next add the chips.

Drop by the teaspoon on a baking sheet with room for them to expand some. Bake for 8-12 minutes or until slightly golden.
