I love peanut brittle. There is nothing like making a batch from scratch and tasting it as soon as it cools. This is actually really fast to make. Start to finish is about 30 minutes. Make sure you measure the butter and baking soda ahead of time. The temperature goes quickly from 220-300.
Finest Peanut Brittle Candy

Ingredients:

1 cup sugar
½ cup light corn syrup
¼ teaspoon salt
¼ cup water
1 ¼ cups raw peanuts (Spanish peanuts)
2 tablespoons butter softened
1 teaspoon baking soda
Directions:
Grease a cookie sheet well and set aside. Measure baking soda and butter in a small bowl and set aside.
In a heavy saucepan, stir together sugar, corn syrup, salt, and water. Cook over medium heat until it boils, stirring constantly.
Set candy thermometer in place and cook until 220, stirring occasionally. Once it reaches 220 add the peanuts. Stir almost constantly so the peanuts don’t just sit and burn on the bottom. Continue to cook until the temperature reaches 300.
Immediately remove from the heat and stir in the butter and baking soda and pour immediately onto the prepared baking sheet.
Using forks pull and lift the mixture into a large rectangle. Once it has cooled break into pieces and store in an airtight container. Enjoy!
