Blueberry Skillet Cobbler Recipe:

Blueberry skillet cobbler is a great dessert. Its easier than making a blueberry pie and I think it tastes better. Either way adding sugar and baking blueberries makes them delicious. Blueberries are healthy. 

Did you know that blueberries are native to North America? Yup, they are.  Blueberries are a great source of fiber, vitamin C, and are packed with antioxidants. These are great reasons to add them to your dessert menu. 

I prefer to make blueberry cobbler in a cast iron skillet. You could also make it in a square baking pan. I would suggest an 9×9 and grease it first. The cast iron skillet also cuts down on dishes as you don’t need to grease the skillet or use a separate bowl to mix the berries. The cast iron skillet just makes the recipe simpler. Give my blueberry skillet cobbler recipe a shot!

Blueberry Skillet Cobbler Recipe:

Directions:

Preheat oven to 350 degrees. In your cast iron skillet (or a medium bowl) add the blueberries, 1/2 cup sugar, 1 teaspoon lemon zest. Mix until the berries are all coated. 

In a bowl mix together the flour, remaining 1 cup sugar, lemon zest, salt and pinch of cinnamon.  Make a well in the center.

Mix in the milk until almost all combined. 

Gently stir in the butter. Don’t worry about getting all the lumps out. You just want the butter worked in. 

Pour over the sugared blueberries. Place in oven and bake for about 35-40 minutes or until center is done (test with a toothpick coming out clean) Serve hot with a scoop of vanilla ice cream and Enjoy!
