BLT Potato Salad
I love a BLT sandwich. I decided we should have it in our potato salad to change things up. Here is how I made it. It came out YUMMY!!
BLT Potato Salad Recipe:
Ingredients:
3 pounds of potatoes
2 cups mayo
1 tsp salt
½ tsp pepper
1 tsp celery seed
½ tsp garlic powder
½ tsp onion powder
½ bag of romaine lettuce
1 pint of cherry or grape tomatoes
1 pound of bacon fried to a crisp
Directions:
Scrub potatoes and boil on high until tender when a knife is inserted. Drain and let cool. In a large bowl, mix together mayo, salt, pepper, celery seed, garlic powder, and onion powder. Peel potatoes and gently cut into bite size pieces. Place in the mayo mixture. Crumble bacon and add to the bowl. Cut tomatoes into quarters and add to the bowl along with the lettuce. Gently fold and stir to combine. Refrigerate until cold.
