BBQ Ranch Salad

BBQ Ranch Salad started as a craving. My family loves chicken and salad for dinner. We usually just pile on random veggies along with grilled chicken.  Last night I decided to make a pretty salad with the BBQ flavors I was craving. 

This BBQ ranch salad needed BBQ chicken, grilled corn would definitely go along with bacon and tomato. I tossed In cucumbers because I had some already sliced. Every good BBQ sandwich has fried onions and might as well toss in some cheesy croutons to finish it off! My kids ate seconds and actually wanted it again for lunch this afternoon. 

Now this BBQ ranch salad need a BBQ dressing. I didn’t see any at the store and decided to wing it. I couldn’t do full ranch because my hubby doesn’t like ranch. So I added a few herbs, tossed in some BBQ rub seasoning and BBQ sauce to give it that good flavor I had been craving. I know this salad will not disappoint your BBQ cravings!

BBQ Ranch Salad Recipe:

Ingredients:

3/4 cup mayonnaise 

1 tsp dried dill

2 tsp bbq sauce

1 1/2 tsp chicken rub 

1 tablespoon fresh parsley, chopped finely

1 clove minced garlic 

1 tsp onion powder

1/4-1/2 milk

3 heads romaine, chopped

1/4 cup red onion, sliced thin then chopped

1 ear of grilled corn, cut from cob 

2 chicken breast, baked or grilled with bbq sauce 

1 baby cucumber sliced 

4 strips thick bacon, cooked and crumbled

1/2 cup grape tomatoes 

1/4 cup fried onions

1/2 cheesy garlic croutons

Directions:

In a small bowl mix together the mayonnaise, dill, bbq sauce, chicken rub, parsley, garlic, and onion powder. Stir in small amounts of milk until the desired consistency is reached. Place in the fridge. 

In a large bowl add the romaine. Layer the remaining ingredients in columns. Serve chilled and Enjoy!
