Apricot and Ginger Mustard Beef Lo Mein

Apricot and Ginger Mustard Beef Lo Mein is another recipe for Saucy Mama’s contest to be on #TeamSaucyMama for the World Food Championship. Last year I entered into the Blogger portion of the food competition and loved it. This year I am hoping to compete using Saucy Mama’s products!

My Apricot and Ginger Mustard Beef Lo Mein was my version of a simple Asian food. I grilled the steak in the pouring rain. I attempted to stand at the back porch door hoping to stay dry but my attempt was futile. I ended up getting the back splash and was DRENCHED! Although I was soaked from head to toe my steak came out fabulous! Hope you enjoy!

Apricot and Ginger Mustard Beef Lo Mein Recipe

Ingredients:

1 cup Apricot Ginger Mustard
2 tablespoons olive oil
1-1 1/2 pound london broil
1/4 cup soy sauce
12 ounces lo mien noodles, cooked and drained
1 head broccoli steamed
1/2 pint cherry tomatoes steamed

Directions:

Mix together 1/4 cup mustard with the olive oil. Rub London broil down on both sides with the olive oil/mustard mixture. Set aside to marinate for 15-30 minutes.
Heat grill to about 450-500 degrees. cook the steak about 7-10 minutes on each side. Let rest for 5 minutes.
While the steak rests add the remaining 3/4 cup of Apricot ginger mustard and soy sauce to a small sauce pan. Whisk until hot. Pour over the cooked noodles and toss to combine. Add steamed broccoli and tomatoes. Slice beef and top the pasta. Serve and enjoy!
